Toast the black sesame seeds until fragrant, then grind them finely using a mortar and pestle.

In a pan, combine the unsalted butter, sugar, coconut milk, and ground black sesame seeds. Turn off the heat and shape the mixture into small balls for the filling.

Mix the glutinous rice flour with a pinch of salt and 1/2 cup boiling water (about 120 ml). Then add about 1 1/2 tablespoons cool water (about 20 ml) and knead until smooth. Let the dough rest for 20-30 minutes.

To make the ginger syrup, combine 5 cups water (about 1.2 liters), sliced ginger, rock sugar, and dried red dates in a pot. Bring to a boil.

After the dough has rested, divide it into pieces and wrap each piece around a ball of filling. Bring a pot of water to a boil, add the dumplings, and cook until they float to the surface.

Transfer the cooked dumplings to the hot ginger syrup. Serve warm, topped with sliced almonds or peanuts if desired.
