Vanilla Cake

It is an eggless version of vanilla cake with homemade ricotta cheese as frosting and lastly decorated with juicy grapes.
It is moist , spongy and whole wheat made.

Steps

Mix all dry ingredients except sugar and mix nicely.

In a mixing bowl add all wet ingredients + sugar and mix nicely.

Add vanilla essence and mix well.

Now gradually start adding dry ingredients into wet mixture and mix well, mix by following the cut and fold method. Add milk gradually, add as required.
We need a ribbon like consistency for cake batter. - 5
Transfer to greased cake mould, tap it and then bake either in oven or in assemble oven like cooker / kadhai.
I baked in cooker for around 30 minutes and checked with tooth pick. After bake let it come to room temperature and then de mould. - 6
Curdle milk with help of lemon, after milk is curdled, separate Chena / cheese from whey and rinse under plain water. Put in rest Chena for 1-2 hour to drain off excess water. Crumble Chena.

Then transfer crumbled Chena to mixer grinder, add vanilla essence + powder sugar + milk and churn for 2-3 minutes, this yields to a creamy texture, frosting is ready.
Cover cake with ricotta cheese as frosting. - 8
Now fully cover cake with ricotta cheese and decorate grapes or any fruits of your choice.
