Steps

Mash boiled potatoes and add carrot, green chilli, salt, corn flour, coriander and give a good mix, it will take form of a dough. Pinch medium size portion from dough and make balls. Coat balls in corn flour and keep aside.

Deep fry balls till golden brown and keep aside. Assemble ingredients for gravy.

In moderately heated pan, add oil, add garlic and sauté for few seconds, add ginger paste + onion + chilli and sauté for 1-2 minutes, then add capsicum + pepper powder and sauté for few minutes till capsicum turns soft yet crunchy.

Now add all sauce one after another + vinegar + salt, mix well and cook for 2 minutes under medium flame. Now add 1/2 cup water and cook for 2-3 minutes, lastly add the balls and mix well so that the balls coats well with gravy. In this stage corn flour slurry can be added if want gravy.

Garnish with spring onion greens / coriander stems, Potato Manchurian is ready to serve.
