Vermicelli upma or semiya upma is a famous South Indian breakfast made with vermicelli, veggies, spices, herbs and lentils. It is a super quick dish that can be made under 20 minutes.

Vermicelli upma or semiya upma is a famous South Indian breakfast made with vermicelli, veggies, spices, herbs and lentils. It is a super quick dish that can be made under 20 minutes.
Steps

Heat 1 tsp oil in a pan and add the semiya in it.

On low flame roast the semiya for 3-4 minutes, then keep aside.

Heat oil or ghee in a pan, add the mustard seeds and cumin seeds and let them begin to crackle.

Add chana dal and then add chopped onions.

Add green chilli and chopped tomato.

Now add chopped veggies, mix very well and sauté till the veggies become soft.

Now add water, salt and let the mixture come to a rolling boil.

Lower the heat and add the roasted vermicelli.

Stir and cook the vermicelli till they become soft and all the water is absorbed.

When the vermicelli is cooked completely and all the water is absorbed, switch off the heat and add chopped coriander leaves.

Serve the semiya upma garnished with a few fried cashews.
