Altered a recipe on Goya can and it came out delicious! Can sub chicken for shrimp, fish, or any protein. Serve with side of rice!

Ingredients

  1. 2chicken breast, sliced
  2. 1 (13.5 oz)can coconut milk
  3. 6 clovesgarlic, chopped
  4. 1medium onion, sliced
  5. 3ribs celery, sliced
  6. 1tomato, chopped
  7. 1chicken bullion cube
  8. 1 Tblolive oil or coconut oil
  9. 1bay leaf
  10. 1 tsptomato paste
  11. Cilantro, optional

Cooking Instructions

    Stir fry garlic, onion, and celery in oil until soft, about 5 minutes.

    Add in chicken and cook until chicken turns white on the outside.

  3. 3

    Add in coconut milk, tomato paste, bay leaf, and chicken bullion cube, turn to lower heat to simmer for 10 minutes.

    Lastly, add in chopped tomatoes and garnish with cilantro

  5. 5

    Great with rice!
