I am Mexican... My family loves this rice and its a good way to get the kiddoes to eat veggies (well mine loved it so i hope it works for yours too) 😂😀

Cooking Instructions

On a pan (The one u usually use to make rice) add the vegetable oil let it heat a lil (not too much)

Add rice and fry it till its light gold/brown.

Add onions (if using them) let it brown a lil more (make sure its not turning black lol)

Add water

Add Knorr since i do this often im not sure how many tbs u need ______ for this time i used 2 1/2 plastic spoons of knorr but it depends how much rice u are cooking (this is the one i use)

Let it boil a lil bit add garlic and cumin (to taste)

Add the can of veggies

Let the rice cook (make sure u taste it just to make sure u dont need more knorr) then done ( if u like it dry let the water go but if not then add water to your desired consistensy!) _________U CAN ACCOMPANY WITH SOME ENCHILADAS 😍 Delicious!! 😀

I wanted to re-create the green colored rice served at Mexican restaurants. I made it with coriander and jalapeno pepper. I used a reduced-salt chicken stock, so if you are using regular chicken stock, taste it before you start cooking the rice with it and adjust the salt. This is a lightly flavored rice, so it goes well with curry too.Instead of cooking the rice in a pan, you can put it in a rice cooker at Step 3 and cook it in there instead. Long grain rice like Indica or Thai rice are suitable for this recipe, but if you don't have any you can just use regular (Japanese type) rice.
