California Farm Tater Tots

I grow several kinds of potatoes, and each kind has a different flavor and use. Yukon Yellow Gold and German Butterball potatoes make the best tater tots, but any potato will do. Easy recipe for busy parents. And you can mix beef, pork, chicken, fish, omelette, carrots, bean sprouts, onions, tofu, mushrooms, seaweed, apples with the potatoes as a filling, so they become healthy different snacks, kids get used to other flavors. Oven baked in breadcrumbs or panko, skillet or deep fried. No special equipment needed. Freezes well, tastes great when reheated in microwave or oven. Inexpensive, yet special treats.

Cooking Instructions

Make 24 tater tots per batch by making soup from one pound of beef, or pork or fish, or chicken or mushrooms, seaweed, veggies, tofu or omelette strips or apple in one quart water, bay leaf, Tbs parsley, salt, bring to boil, then simmer till you have one pint of broth left and the filling is soft, about 1 1/2 hours.

Boil potatoes: quarter, bring to boil in salted water, simmer 30 minutes, drain, leave in pan to dry and cool. Mash. Mix 2 cups of chopped filling with 2 pounds mashed potatoes, one cup grated cheese and one egg, 1/2 tsp of nutmeg, tsp cornstarch in 3 Tbs of cooled broth. Use broth to add to tater tot mix till sticky.

Flour your hands, Roll into heaping soup spoon size ball in breadcrumbs or panko, then roll flat to tater tot shape. Cool in fridge till solid. Oven bake at 350F after spraying with olive oil, till golden brown, about 30 minutes, or fry 5 minutes in skillet in butter, lard or olive oil or in deep fat fryer and grapeseed oil at 400F degrees.
