Tonight, I'm making use of leftovers... yesterday's bean salad, some pumpkin from a few days ago, and sausage from the freezer to put together a delicious, healthy soup.

Tonight, I'm making use of leftovers... yesterday's bean salad, some pumpkin from a few days ago, and sausage from the freezer to put together a delicious, healthy soup.

Wash the vegetables and herbs, then finely chop everything. Clean and wash the pumpkin, then cut it into small cubes.

Add a few tablespoons of olive oil to a pan. Add the chopped carrot and other aromatics, then add the pumpkin, sausage cut into pieces, and beans. Sauté everything for 5 minutes, then add the tomatoes, some boiling water, and salt. If you like, add a little hot chili pepper.

Cook for about 30 minutes. Serve the soup with croutons.
