This bread has turned beautifully light, I guarantee that the taste of herbs and spices will tickle your taste buds. However, I promised myself that next time I will increase the amount of herbs and spices to enhance the flavor even more.

This bread has turned beautifully light, I guarantee that the taste of herbs and spices will tickle your taste buds. However, I promised myself that next time I will increase the amount of herbs and spices to enhance the flavor even more.

In the bowl of a stand mixer fitted with dough hook, combine first 7 ingredients and kneed for 5 minutes. Let it rest covered up for 3-4 minutes then add all the herbs and spices. Kneed for a further 2 minutes.

Tip the dough into an oiled bowl, cover and let prove for about an hour or until double in size.

Knock back the dough stretch and fold, then roll out the dough in a rectangle shape. With a sharp knife cut 1 cm strips half way into the rectangle, then roll it up starting from uncut side. Place in a large bread baking pan cover and let it rise the second time.

Brush your bread with milk, sprinkle sesame and poppy seed on top. Preheat oven to 200c (on fan assisted) bake for 5 minutes then turn down to 180c continue baking for a further 30-35 minutes. It is advisable to place a small dish of water at the bottom of your oven to create steam.
