When we think of one of the most popular and world-renowned legacy dishes of our nation the delicious and mouth-watering Pakistani chapli kabab usually tend to be at the top of the list.

Originating from Peshawar hence popularly known as Peshawari Chapli Kabab, this specialty of the Pashtun Cuisine’s name is derived from a Pashto word called chaprikh, meaning flat indicating the shape of the globally popular kababs. Mughal culinary influences in the region popularised a number of kebab dishes, resulting in local recipes such as the chapli kebab

While the delectable dish has been one of the major reasons why people travel from far and wide to Peshawar, it is now widely available across Pakistan and even Afghanistan, and India.

The city of Peshawar, where the recipe took hold, has over 2,000 kebab houses that serve the chapli kebab. Such eateries have rapidly expanded in other cities as well. Today, the chapli kebab is featured on the menu of South Asian restaurants across the world.

Ingredients

2hrs
make 80 kebab
  • 5 kgmince (25% fat twice minced)
  • 15medium sized onions
  • 12fresh green chillies
  • Fresh coriander leaves roughly chopped
  • 5tblsp garlic, ginger paste
  • 10medium sized tomatoes (deseeded, roughly chopped)
  • 5eggs
  • 10tblsp plain flour
  • Oil for frying
  • Dry Spice Mix
  • 2& 1/2 tblsp lighty crushed carom seeds
  • 12&1/2 tblsp lighty crushed coriander seeds
  • 5tblsp lighty crushed cumin seeds
  • 4tblsp pomegranate seeds Or powder
  • 6tblsp red chilli flakes
  • 2& 1/2 tblsp cumin powder
  • 2& 1/2 tblsp garam masala powder
  • 1& 1/2 tblsp black pepper powder
  • 4tblsp salt or to taste

Steps

  1. 1

    In large bowl take mince, dry spices mix, green chillies, ginger, garlic, onions, fresh corriander and mix well. Marinate for 1hr.

    Just before frying, add tomato, egg and flour. Mix well until mince gets a dough like consistency.

    Fry a small petty of kabab and do a taste test. Adjust if needed. (This step is optional.)
    Roll out balls of kabab and flatten with hands.

    fry kabab in a oil for 2-3 minutes on medium flame until crispy and lightly charred.

    #Notes:

    #Ground_Meat:
    You can use ground beef, lamb, or chicken for this recipe. Remember the fattier the better. Ground meat or mince needs to have 20% to 30% fat. Extra fat in the mince keeps the kabab moist and soft. It also binds the kabab and prevents it from breaking.
    Make sure all the moisture out of the mince very well. This will help ensure the kebabs don’t fall apart when cooking.

    #Onion:
    Onions add some sweetness and taste to the recipe, just be sure to squeeze excess onion water.

    #Tomato:
    Use firm and ripened tomatoes. Avoid soft and tender tomatoes with loads of water. Add tomatoes just before frying and roll kebab as go.

    #Store_Chapli_Kabab:
    Cooked Chapli kabab can be stored in the fridge in an air-tight container. Reheat in a covered plate in the microwave before serving. You can also freeze it for up to 2 months.
