Pour 2 tbsp mustard oil in a kadai. Add the vadi and fry it till it is light brown in colour. Remove from oil and keep aside. Now add the bitter gourd, fry it and keep aside. In the same oil add the panch foran and wait for it to splatter. Now add the potatoes, raw bananas, radish, drumsticks, brinjal and saute them for 5 minutes. Now add the bitter gourd and the vadi that were kept aside. Now add the diluted mustard paste. Add little water. Now add the cinnamon stick, cardamom, bay leaf.

Also add the salt and sugar. Stir it and cover with a lid.Let it simmer on medium flame for 15-20 minutes. After 20 minutes when the vegetables are cooked, open the lid, add the ginger paste and 1 tbsp ghee and remove from flame. Shukto is ready. Serve with steamed white rice.
