Edamame Mixed Beans Salad

Frozen Edamame (Young Soy Beans) are available from many supermarket stores these days. Edamame is a great snack, and also a fantastic cooking ingredient. If you have never used Edamame for cooking before, Salad is the easiest option for you to try. I often mix Edamame with Canned Mixed Beans to make a salad. I seasoned this salad only with Salt, Black Pepper and Lemon Juice. I added No Oil, but you get good Oil form Avocado. It’s a healthy salad with loads of different nutrients.

Cut Cucumber and Carrot into small pieces in the size similar to Beans. Place in a mixing bowl, add Edamame Beans, season with 1 pinch Salt, and mix well.

Add drained Mixed Beans, Red Onion, Avocado and Parsley, and season with Salt, Black Pepper and Lemon Juice (OR Vinegar).

*Note: Fetta Cheese is a great addition to this salad. You may wish to add other Herbs such as Coriander.
