Strain maida, add salt, ajwaen and zeera,mix them add ghee and with fingers mix it till its like crumbs when you take in hands and press it, if it holds than add room temperature water.

Now add water gradually and mix well and form a medium hard dough just like we do for samosa dough. Roll on board and press with palms for few mins, zaida nahi gundna hay.Form a ball and keep in a bowl. Spread little oil on top.

Cover and rest. Now on a clean surface dust some flour. Make 2/4 portions of dough. Make ball /pera and roll big like roti, na zaida mota ho na boht patli, Now with any glass or cutter make circles.
Make marks with a fork on each round. It's important step agar fork se prick nahi karen ge to papri phool jae ge gol gappay jese. - 4
Heat oil in a pan, flame should be medium, now check oil by putting little dough in it if it comes up than put your puris in oil, they will come up immediately, when its firm and changes colour keep turning and low the flame so its cooked from inside. Take them out when nice light brown colour comes and crispy.
Take out and put on a big strainer n cool. Not on paper. - 5

You can store them when cool in air right jar.
