Gazpachuelo is a traditional dish from Málaga. There are many different recipes, with or without fish, depending on the region and the cook. This recipe was given to me by a woman from Málaga, who mentioned that when fish is included, Viña AB, a typical amontillado wine from Jerez, is added.

Peel and roughly chop the potatoes. Cut the green bell pepper into strips or cubes.

In a pot with water and a pinch of salt, cook the potatoes and green peppers.

Meanwhile, make a mayonnaise by blending the egg, salt, and extra virgin olive oil.

Squeeze the lemon and add the juice to the mayonnaise. The mixture will look separated.

When the potatoes are cooked, remove the pot from the heat. Gradually add the mayonnaise, stirring well so it doesn't separate.

Add the bread, cut into pieces, to the pot while continuing to stir.

Serve hot, right after preparing.
