Ingredients

4 servings
  1. 400 gdeboned leg chicken, wash, cut 3x3cm
  2. 1Chicken breast, slice half, then cut into square 3cm x 3cm
  3. 1/2& 1/2 big white onion chopped finely
  4. Basmati Rice, cook for 4 persons in Rice Cooker
  5. 1+2 garlic cloves smashed, then chopped finely
  6. 4 cm+4 cm Grated fresh ginger, dice finely
  7. 2 tbsTeriyaki Sauce
  8. 1 tbsSesame seeds
  9. 1 cupButter Chicken Masala in a jar (from Asian Supermarket)
  10. 2 pcsKaffir lime or Lemon leaves, tear off at the edges
  11. 2 tbsTamarind Paste (has sharp sweet lemony flavour)
  12. 1 cupdouble Cream
  13. 1 bunchSwiss Chart /Silverbeet, wash, chopped roughly
  14. 3 handfulsfrozen Green Beans (of cutting 3 cm long)
  15. 3 tbs+3 tbs + 2bs oil the Rice Bran oil for stir- fry

Steps

    Wash the deboned Chicken legs, cut into 3x3cm, mix with Teriyaki sauce, marinade for 10'. Cook 1. 5 cups washed Basmati arice in Rice Cooker.

    In a wok, warm 1cup cooking oil, stir fry the onion for 2' then add 1 garlic, ginger and stir-fry for 1' then put the Chicken Legs pieces, stir fry for 3' then, add the 2 tbs Teriyaki Sauce and sprinkle of salt, tossing around and cook for another 5'. Taste the salt. Turn off, remove, transfer to a serving dish, sprinkle on top 1 tbs Sesame seeds.

    How to make a quick and simple Butter Chicken. Slice in half the Chicken Breast, then cut the Chicken Breast into 3cm x 3cm marinade with lemon juice for 10'.

    Heat 1 cup oil in a wok, add the onions, stir fry for 2', then add 2 garlic cloves & ginger, stir fry 1' then add the Chicken Breast pieces, salt, grinded black pepper add the Butter Chicken paste, lemon leaves & the Tamarind paste and stir-fry for 3'
    Cook until well coated and tender then lastly add 1 cup double Cream and just keep stirring for another 1 minute, taste the salt then when the chicken has cooked, turn off the fire, remove. Transfer to a serving dish.

    In a wok put I tbs oil, heat add 2 tbs chopped onions then stir fry for 2 minutes then add 1 garlic
    the frozen Green Beans, pinch of salt 1 cup water and grated Black Pepper.
    Let it boil, simmer for 10 minutes until the veges are just cook, and crunchy. Turn off the fire. Then transfer them into a serving dish.

    In a wok put 1 tbs chopped onion, fry in 1 tbs Oil, then add the Swiss Chart vegetable, salt and 1 the water. Stir fry for 2 minutes, half cooked then quickly turn off the fire. Transfer to a serving dish

    To assemble, to serve on the table:
    Scoop out the fluffy warm rice onto individual plate. Put a few Butter Chicken Cream Masala with the gravy on top of Rice as bed. On side put Chicken Teriyaki pieces, the cooked veges Green Beans and Swiss Chard/Silverbeets.

As an ordinary housewife, I love doing home cooking & baking, or sperimenting world culinary but I'm a learner in the kitchen, so bear patience with me of my mistakes as all depend on time, availability, strength of health,moods & budget. I have to do the recipes that suites to me, to my husband, kid to my own family's preferences, so my cooking is just simple and not a restaurant style.🇮🇩 😚 I spent my childhood till teen age in Indonesia, a country that loves rice, spicy casserole with gravy, light soup bowls with sambals hot chili sauce on top. My mum cook almost daily 🐟🐋🐬fresh fish dishes, a menu that has plenty of vegetables on the table, we oftenly have snack many times a day. Delightful for us as kids to have🍍🍋🌽plenty of tropical fruits at home. In my birth city the sun shine 10 months yearly, the heavy raining season is 2-3 months approximately it depends in what zone location you are.😍My mom is passionately into cooking and I growing up got inspired and learnt from her cooking recipes, but I didnt learn much because I spent most of the time with the school programs.😍🌶Now I live with my husband in New Zealand. I couldn't find many of the ingredients from the Asian stores for my cooking, so I've tried to substitute the ingredients. The results are that the taste of my cooked dishes are not perfect to the original recipes. I've to reduce the quantity of the hot chilies as my husband or invited friends who can't eat hot meal at all but the main thing is that the dishes taste delicious & healthy.My quote: Keep on trying to improve my own cooking.
