Started with the Columbia Restaurant recipe, made it keto friendly, added some spices, and cook it in the crockpot.
Steps

Wash peppers, cut out stem, and remove seeds and membranes

Open can of diced tomatoes. Drain liquid into crock pot. Arrange peppers in bottom.

Sauté onion until tender. Add beef and garlic, cooking until beef is no longer pink.

Add all remaining ingredients, reserving 1/4 cup ketchup. Add 1 tsp salt and 1/2 tsp pepper.

Spoon meat mixture into peppers in crock pot. Top each pepper with ketchup

Cover and cook on low for 5 hours. Enjoy!
