Cooking Instructions

Crack 2 eggs, which add 3/4 cheese add w black pepper use 2 tbsp

Add minced garlic and pancetta on med high.. add 1 tsp butter, add frozen peas.. you want the pancetta to cook for 3-5 minutes.. it should caramelize. Don’t add peas until half way.

Boil noodles.. a little softer than Al Dente. Add salt.

Drain noodles.. save pasta water.

Mix hot noodles, 1 tbsp olive oil, egg and cheese mixture, hot pancetta / garlic/ pea mix.. add remainder of cheese. Add more pepper to taste.. add 2 tbsp of hot pasta water to keep the mixture creamy. Add more water as needed.
Texture should be creamy.
Serve immediately !!
