Steps

Soak chickpeas overnight and drain the water. Pressure cook for 5 whistles, depressurise, strain but don’t throw the water

Wash the carrots, peel, cut into roundels, slice onions.

In a wok heat oil add carrots and onions, cook for 3 mins on high flame, reduce the flame and cook for 4 mins

Set aside and cool completely. Add to a blender

Add chickpeas, tahini, garlic cloves, cumin powder, paprika, salt, olive oil and chickpeas boiled water gradually.

Blend smooth and set aside

Plate, drizzle olive oil, garnish with paprika, boiled chickpeas and serve with carrots abs cucumbers
