Serves 4 servings
  • 2cucumbers
  • Cherry tomatoes, as desired
  • 1/2small red onion
  • About 9 oz stale whole wheat bread (250 g), soaked
  • Vinegar, water
  • Olive oil, salt, and basil

Steps

30 minutes
  1. 1

    Soak pieces of bread, preferably classic unsalted Tuscan bread, in water with a little wine vinegar.

  2. 2

    Drain the bread and squeeze out excess liquid.

  3. 3

    Mix the vegetables with the bread and season with olive oil and salt.

  4. 4

    Add basil if desired.
