Vegan Walnut Mushroom Meat

This recipe was adapted from a recipe for #spaghettibolognese that I found on the website "WhatTheHeckDoIEatNow.com" which I have found to be a valuable resource. I always wondered how vegans made "meats" for recipes. I havent eaten pork in years. I've always been somewhat of a vegetarian my whole life already. However, Since I've recently started exploring the world of being #vegan one of the main foods that I've wanted to cut out is ground beef. Being raised Italian on a diet that consisted of alot of ground meats, being now "turned off" by them made me miss alot of traditional & regular recipes in my life. This #veganswap changed my life. Cooking Instructions

Process your walnuts in a food processor or other appropriate kitchen appliances/utensil.

Then, add mushrooms and pulse about 10-15 more times. Add flour, 1 tsp salt, & 1 tsp pepper and pulse a few more times. But be careful not to over process!

Next, heat 1 tbsp of oil in a large skillet over medium heat & add mushroom walnut mix to the pan. Cook until browned. About 15-20 minutes. (Watch closely to prevent burning and turn frequently.)

Meanwhile, heat a smaller skillet and add remaining tbsp oil. Saute onions & garlic until softened.

Then, add sauteed onions & garlic to larger skillet with mushroom walnut mix. Also, add remaining tsps of salt & pepper, onion powder, and garlic & herb seasoning. Stir well to combine.

Continue to cook for another 5-10 minutes until heated & browned evenly throughout. Remove from heat & Voila! Enjoy this as a replacement for any ground meat in any recipe!

I roughly diced soy beans in a blender, and mixed them with some okara from handmade tofu that I wanted to use up.Chunky okara gives it a nice texture and can be used as a substitute for ground meat.
