Ingredients

  1. 240 gfirm tofu
  2. 1 cupred lentils
  3. 1medium onion
  4. 1red pepper
  5. 3 clovesgarlic
  6. 1 inchroot ginger
  7. 1 handfulcherry tomatoes
  8. 2 cupswater
  9. 2 tspcurry powder
  10. 1 tspcayenne pepper
  11. 1 pinchsalt
  12. 1 handfulfresh coriander
  13. 1 tbspoil
  14. 2 tbspgreek yoghurt (optional)

    Gather and measure out your ingredients. Slice the onion, chop the red pepper and mince the ginger and garlic. Lastly rinse and strain the red lentils.

    Heat the oil in a pan on a medium heat and add the garlic and ginger. We don’t want them to burn so after a minute lower the heat, add the sliced onions and sweat down for a few minutes.

    Next mix in the curry powder and cayenne pepper and continue to cook for a minute. Should start to smell delicious already!

    Now add the lentils and 2 cups of water, bring to the boil then simmer for 10 minutes.

    Half way through the simmering add the peppers and cherry tomatoes. Keep an eye on this. If it starts to get too dry add another cup of water.

    While the curry is simmering away, dice the tofu and press between two paper towels to get it nice and dry, then stir the tofu into the curry.

    Let this cook for another 5 minutes or so. Have a taste carefully and add the yoghurt if it’s too spicy. Serve and sprinkle with fresh coriander.
