Lebanese style bulgur and chickpeas (vg 🌱) (Bulgur bi dfeen)

A tasty vegetarian/vegan dish that is very common in Lebanon especially during lent season or towards the end of the month when you’re on tight budget 💸
Bulgur in general is a great substitute for rice as it’s higher in fibers and protein and tastes great as well!

Steps

Heat some olive oil in a pot and start with frying the onions until translucent
- 2
Add the chickpeas along with the spices and cook for a few minutes

Add the bulgur and mix on medium heat with the chickpeas and onion until each grain is of the bulgur is covered with oil and spices

Add warm water. Give it a stir and taste the water to check if it has enough salt. Let it cook on high heat uncovered until you see bubbles on the surface

Lower the heat medium to low, cover the pot and let the bulgur cook for around 15 minutes.

I served it with toasted nuts on top
