Ingredients

5 servings
  1. 3 Poundsfresh ripe tomatoes
  2. 5-6 ClovesGarlic (peeled)
  3. 1/2Yellow Onion (diced)
  4. 1/2Red Bell pepper (diced)
  5. 2 Tablespoonsolive oil
  6. Salt & Pepper to taste
  7. 1/2 TeaspoonDried Basil
  8. 1/2 TeaspoonDried Oregano
  9. 2 Tablespoonsfresh Parsley
  10. 2 CupsChicken Broth
  11. 1/2 CupHeavy Cream
  12. Shredded Parmesan Cheese (for garnish)

Steps

35 Mins.
  1. 1

    Preheat oven to 450 degrees F.

  2. 2

    Wash and Cut tomatoes into large chunks (take out all seeds and insides)

  3. 3

    Place tomatoes, garlic, onion, bell pepper, olive oil, salt, pepper and dried herbs on a large pan. (easiest if you put all of this into a large bowl, mix together and then place on pan.

  4. 4

    Roast for 25 Minutes.

  5. 5

    Bring chicken broth to a boil, add the roasted tomatoes, onions and bell pepper, add fresh parsley. Using a hand blender, blend mixture until smooth and creamy. Add heavy cream and blend again until blender together.

  6. 6

    Top with shredded parmesan cheese and enjoy!
