Preheat oven to 450 degrees F.

Wash and Cut tomatoes into large chunks (take out all seeds and insides)

Place tomatoes, garlic, onion, bell pepper, olive oil, salt, pepper and dried herbs on a large pan. (easiest if you put all of this into a large bowl, mix together and then place on pan.

Roast for 25 Minutes.

Bring chicken broth to a boil, add the roasted tomatoes, onions and bell pepper, add fresh parsley. Using a hand blender, blend mixture until smooth and creamy. Add heavy cream and blend again until blender together.

Top with shredded parmesan cheese and enjoy!
