Spicy rye banana bread
As rye flour is a healthy fibre option for flour, I wanted to find recipes to use this. I tried several recipes for banana bread available on the internet and adapted them to make a delicious coconut/ginger influence. Of course this recipe can be adjusted for your favourite dried fruits and spices. Coconut oil can be used to increase the coconut flavour.

Pre-heat oven to 425 degrees and line deep baking tray or muffin tins

In large bowl mash bananas. Beat eggs and add wet ingredients together. Mix well. Add sweeteners of your choice and mix well again.

Mix dry ingredients together and then add to wet ingredients and mix well. Adjust consistency if necessary to keep very moist dough.

3/4 fill baking tray / muffin tins. Do not fill too much to allow for some rising.

Bake for 25 to 35 minutes depending on your oven.

Allow to cool fully before serving.

Can add sultanas and/or pieces of chopped chocolate, and adjust spices to your taste. The photos are the outcome with added sultanas and chopped chocolate pieces.
