Ideally it's good to let the mixture set for 30 mins to allow all the starches blend for a full flavour. I add brown sugar (or any sugar) to give it a little crispness and sweetness - totally optional.

Ingredients

6-10 servings
  1. 250gms/1Cup Flour
  2. 250ml/1 Cup Water or Milk or Buttermilk
  3. 1 TbspCorn Starch
  4. 2Eggs
  5. 1 Tbspbrown sugar (optional)

    Mix together, if using buttermilk, you may need to add some water to make thinner.

    Heat nonstick pan on med heat with a dab of butter.

    Once butter is slightly bubbly add roughly 100 ml of batter to pan and thinly spread by tilting pan in a slow circular motion.

    Once placed batter turns from glossy to dull, flip. It should have some browning on both sides. Turn down heat to med-low to avoid burning.
