Honey Wheat Rolls

Many steakhouses serve individual loafs of some variation of a dark bread. This is a honey wheat variation that's hearty, slightly sweet but soft and really full of flavor. It's great warm with soft butter melting on each slice. It freezes great, just thaw and heat in a 375 oven for just a few minutes to warm and crisp crust.Instead of loafs I made rolls.The rolls are also a great sandwich roll.

Ingredients

9 servings
  1. 1 1/4 cupsplus 1 tablespoons warm water
  2. 2 teaspoonsgranulated sugar
  3. 2 1/4 teaspoonsrapid rise yeast (1 envelope)
  4. 2 cupsbread flout
  5. 1 3/4 cupwhole wheat flour
  6. 1 tablespooncocoa powder, unsweetened
  7. 2 tablespoonsbutter, at room temperature
  8. 1/4 cuphoney
  9. 2 tablespoonsmolasses
  10. 1 teaspoonsalt
  11. Honey Glaze
  12. 11^2 tablesoons butter
  13. 1 tablespoonhoney
  14. Pinchsalt

Steps

  1. 1

    In a large bowl whisk together the warm water, sugar and yeast and let sit 5 minutes

    In another large bowl whisk together both flours, cocoa powder and salt

    Mix the butter into the flour mixture with a fork and make a well in the center

    Add the honey, molasses and yeast to the well and mix to form a dough

    Turn out onto lightly floured work surface and knead 10 minutes, form into a ball then place in a large nonstick sprayed bowl, cover with plastic wrap and let rise in a warm spot until doubled in size about 90 minutrs

    When the dough has doubled, turn it out on work surface and cut 9 even pieces

    Form into balls to make rolls, making a smooth ball

    Place on a parchment lined baking sheet

    Cover with plastic wrap and place in a warm spot until doubled about 1 hour

    Make Honey Glaze

    Combine butter, honey and salt and melt stovetop or in microwave just until liquid

    Brush each roll top with honey glaze

    Preheat the oven to 350. Bake bread 20 to 25 minutes until done. They will sound hollow when tapped. Serve with butter for spreading

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
