Kadhai Paneer

Kadai Paneer is a popular North Indian dhaba style Indian cottage cheese recipe in which paneer,capsicum,onion and tomatoes are cooked in a gravy made using store bought or freshly ground kadhai masala.It is called Kadhai Paneer as this flavourful dish is cooked in a kadhai ,a special wok popular in every Indian kitchen.Kadhai Masala is made with fresh roasted and coarsely ground coriander seeds,red chillies,cardamoms,cinnamon,cloves and fennel seeds.However, store bought Kadhai Masala can also be used.This delicious Kadai Paneer gravy pairs very well as a side dish with roti, paratha,butter naan,or any Indian flatbread and also with jeera rice or pulao.

Heat oil in a non-stick kadai or wok and stir fry cubed onion, capsicum,tomato and slit green chillies and minced garlic.Set aside.In remaining oil,saute chopped onion,cashewnuts and tomato.Cool and make a paste of it alongwith thick malai.

Heat butter or ghee and lightly toss paneer till light brown.In remaining ghee and oil, sprinkle cumin seeds.When they crackle,add few ginger juliennes, the ground paste, kasoori methi,kadhai masala, Kashmiri Red Chilli Powder and salt to taste.Fry masala sprinkling little water so that masala doesn't stick underneath. Fry till oil leaves sides.

Add a cup of warm water and boil for 2 minutes.Add sautéed vegetables and mix well.Sprinkle garam masala.Then add cottage cheese or paneer and mix lightly.Sprinkle chopped coriander and drizzle some more cream on top.

Garnish with chopped coriander and ginger juliennes.Serve hot as a side dish with tandoori roti,butter naan,paratha or jeera rice in lunch or dinner.
