A great vintage recipe just the way we love them. I’ve had this recipe since my apprenticeship—it’s just so delicious!

Pit the cherries and set them aside.

In a mixing bowl, whisk together the sugar and eggs.

Add the flour and salt, then mix until combined.

Pour in the milk and mix well.

Grease a baking dish with butter or nonstick cooking spray.

Pour the clafoutis batter into the dish and arrange the cherries on top.

Preheat the oven to 350°F (180°C).

Bake at 350°F (180°C) for about 35 minutes.

Let cool.
