Ingredients

Serves 5 servings
  1. 1skinless chicken breast
  2. 15corn tortillas
  3. 4Roma tomatoes
  4. 1/4onion
  5. 2large garlic cloves
  6. 1dried chipotle pepper
  7. 1 cupsour cream (about 1/4 liter)
  8. 2 cupsshredded Manchego cheese (about 1/2 pound or 1/4 kg)
  9. Salt, to taste
  10. Chicken bouillon powder, to taste
  11. 1 pinchground black pepper

    Cook the chicken breast in plenty of water with a piece of onion, 1 garlic clove, and salt. Once cooked, remove the bone and shred the chicken. I use a mixer to shred it quickly.

    While the chicken is cooking, boil the tomatoes, another piece of onion, 1 garlic clove, and the chipotle pepper (I use 1 because we don't like it too spicy, but add as many as you like). Discard the boiling water. Then, blend the tomatoes, onion, garlic, and seeded chipotle pepper with some chicken broth.

    In the same pot used for the tomatoes, add a splash of oil and heat the sauce. Strain it if you prefer. Add salt, chicken bouillon powder, and black pepper to taste.

    Warm the tortillas on a griddle, dip them in the sauce, fill with shredded chicken, pour more sauce on top, add sour cream and cheese. Heat in the microwave until the cheese melts.
