Sweet tahini cake with tahini glaze

I’ve heard from my colleagues and many people here in the UK who buy tahini to use it for a specific recipe that they don’t know what to do with the rest of the jar.
In Lebanon we use tahini in many dishes (obvs!), but one of the simplest ways is to simply use it as a cake pan release (check my tip)
Here’s a tahini cake that tastes really nice and all my colleagues loved it!

Here’s a tahini cake that tastes really nice and all my colleagues loved it!

Preheat the oven to 180C

In a deep bowl mix the flour, salt and baking powder.

In another deep bowl and using an electric mixer, beat eggs, sugar and vanilla essence (or lemon zest- that’s what i used) until the sugar melts and the mixture is pale and thick.

Combine the dry ingredients with the egg mixture, 1 cup of vegetable oil and 3/4 cup of milk until thick

Finally add the tahini. Mix again lightly and gently just to combine the tahini with the rest of the batter.

Grease your baking tin with tahini (or butter or baking sheet), add a sprinkle of sesame seeds and pour in the batter.

Bake in the oven for 30 minutes. I served it with tahini glaze
