Healthy, Delicious and Easy Pav Bhaji Recipe - For breakfast or as a snack for kids and adults too. The most popular Mumbai Street Food. Mixed vegetables are cooked, mashed and spiced with a special blend of spices and served with toasted pavs. Adding a variety of vegetables makes it healthy. The taste and flavor in the pav bhaji depends on the pav bhaji masala. Use of Homemade Pav Bhaji Masala is suggested. Potato is the base of the gravy, so use enough potatoes as compared to the other vegetables. Butter plays an important role in making the bhaji flavorful. Adding a lot of butter gives the bhaji a good texture and taste. The pav bhaji becomes super tasty when you use Amul Butter. But you can opt for good quality white butter. In order to make it healthy, you can used less butter and can toast the pavs/bread slices with oil instead of butter. To get the dish perfect, use fresh pavs and it should be lightly toasted with butter on tawa. I prefer brown bread slices instead of pavs.

In a large cooking vessel add water, green peas, chopped carrot and potatoes. Also add salt, ginger garlic paste, turmeric powder and butter. Mix everything well.

Cover and cook until all the vegetables are soft and mashy. Once cooked, mash the vegetables with the help of a potato masher and make it into a smooth paste. Set it aside.

Keep all the ingredients ready before starting the cooking process.

Chop all the vegetables and set it aside.

Heat oil in a kadhai. Add butter. Once hot, add cumin seeds and allow it to sizzle for few seconds.

Add the chopped onions and saute for 2-3 minutes. Next add the chopped green chillies and saute. Add the ginger garlic paste and saute till the raw smell leaves.

Add the chopped green bell pepper and saute for 3-4 minutes.

Add the chopped tomatoes and salt and saute till the tomatoes are soft and juicy.

Now add turmeric powder, red chilli powder, kashmiri red chilli powder, coriander powder and pav bhaji masala and mix it well. Saute it for a minute.

Add the cooked and mashed vegetables and mix it well.

Add water according to required consistency. Let it simmer for about 2 to 3 minutes. Add the chopped coriander leaves and butter and mix it well.

Add some salt and pav bhaji masala. Mix well and cook for a minute.

Add lemon juice and mix well. Keep it covered.

Now to toast the pavs. Instead of pavs, I have used brown bread slices. Heat a pan. Add butter and some chopped coriander leaves and toast the bread slices/pav lightly on both sides. Remove it to a platter and repeat for the rest of the pavs/bread slices.
Healthy and Tasty Pav Bhaji is ready to serve. Serve the warm Pav Bhaji with dollop of butter on top and some coriander leaves. On side serve some finely chopped onions, lemon slices and toasted pavs/bread slices.
