Assemble ingredients

Put water to boil.

Roast cashews and keep aside

In moderately heated pan add oil, add mustard seeds + curry leaves and allow to sizzle, then add Onion + carrot + capsicum + little salt + turmeric and stir fry for 3-4 minutes.

Then add water and keep stirring, water evaporates as sooji cooks. Add sugar + salt as required and mixture thickens.

Simmer for 3-4 minutes under low flame, add roasted cashews and mix well. Upma is ready to serve.

Garnish with cashews and serve.
