Sieve the flour, cornflour, baking powder and salt. Add spices into the batter, then add the liquid. Beat to a smooth batter.

Pat the fish dry with kitchen paper, then toss it in the plain flour. Shake off any excess, then dip into the batter ensuring it is well covered. Carefully lower each fillet into the hot oil and fry for 5-6 mins – depending on the thickness of the fish – until golden and crisp. Using a large slotted spoon, lift out the fish, drain on kitchen paper. Serve hot ♨️

#Tips:
Dredge the fish pieces in additional plain flour to help the batter stick to the fillets.
The oil needs to be nice and hot for frying the fish otherwise your batter will be soggy.
Add some ice cubes in batter makes the batter crispy and light.
