  3. 1 headgarlic
  4. 5shallots
  5. 1 tablespoonwhole peppercorns
  6. 2 stalkslemongrass

  9. 10 1/2 ozpork belly (about 300 grams)
  10. 1.1 lbsboiled bamboo shoots (about 500 grams)
  11. 1 cupcoconut milk (250 ml)
  12. 4large chili peppers
  13. 5kaffir lime leaves
  14. 1 tablespoonpalm sugar
  15. 1 tablespoonseasoning powder
  16. 1ladle fish sauce
  17. 2ladles fermented fish sauce
  18. 1 2/3 cupswater (400 ml)

Cooking Instructions

    Slice the lemongrass, shallots, and fingerroots, then pound them together with the peppercorns, fresh chili peppers, and garlic.

    Cut the pork belly, bamboo shoots, and large chili peppers.

    In a pot, combine the coconut milk and water, then add the pounded curry paste. Bring to a boil.

    Add the pork belly and season with seasoning powder, palm sugar, fish sauce, and fermented fish sauce. Cook until the pork is done.
