Steps

Boil potatoes and mash them, keep separate, chop all the ingredients under crush together, grind roughly

Heat oil add mustard seeds,cumin seeds when they crackle, add asafoetida, curry leaves and saute, add crushed green chillies mixture and saute again, add kashmiri red chillies powder, turmeric powder, chop green chillies saute, add salt, mashed boiled potatoes mix

Remove the mixture, let it cool down, shape into flat rounds (tikki).

Mix all the ingredients of batter in a bowl, dip rounds in the batter and deep fry them, till golden brown.

For green chutney: wash and clean coriander leaves, mint leaves, grind all the ingredients with water to get a thin smooth chutney, add more water if required, green chutney is ready.

For garlic chutney: soak green chillies/ dry red chillies in hot water, break red chillies into small pieces, after 1/2 hr, grind the soak chillies along with the water, add garlic, coriander seeds, cumin seeds, oil, sugar and lemon juice to semi smooth paste, remove in a bowl.

Heat oil and add chilli paste, cook for 2-3 mins on low, when oil separates, add water and bring it to boil, simmer for 2-3mins, remove from fire, garlic chutney is ready.

To assemble: cut pav into half, spread some garlic chutney on the cut surface of the bottom piece of pav and add green chutney on the cut surface of the top pad, place one vada in between each pav, serve.

Tip: use burger buns if pav is unavailable.
