In San Diego there is a place called The Trails. They have a good gluten free menu. The dish that blows the door off everything else is their Gluten Free Cinnamon Roll pancakes. So I wanted to make a awesome waffle with some bacon and this is it.

Weekend Breakfasts are a treat for my daughter. She dreams up interesting combinations, which sometimes turn out really great😀In the absence of a waffle iron, the same mixture can be used to make drop scones..just heat a pan and oil it, drop a table spoon of the batter, several of them into the pan...once it bubbles and firms up, turn over.Both can be a breakfast treat or a dessert, experiment with various toppings☺
