I love to serve khichuri with aloo dum on a rainy day and we must say that Bengal have their very distinct Stuffed Dum Aloo recipes. The following recipe is my innovation and slightly different taste it has been moderated to suit a wider range of palates.

I love to serve khichuri with aloo dum on a rainy day and we must say that Bengal have their very distinct Stuffed Dum Aloo recipes. The following recipe is my innovation and slightly different taste it has been moderated to suit a wider range of palates.

Start the recipe by peeling potatoes. You can use regular size potatoes, cut them in half and proceed with the recipe. Scoop out the center of the potatoes. Do not scoop too much, leave a little rim around the edges.

Reserve the scooped potato insides, we will use it as a stuffing along with cholar daal

Cover and cook the potatoes and scooped part until soft and tender.

Insert a toothpick to check if done. The toothpick should slide through smoothly. Set it aside.

Soak the cholar daal for an hour. Then discard the water and grind to a paste
- 6
Prepare the stuffing-
Add 1 tbsp ghee in pan,add hing and add the ginger paste and saute. Add the mashed cholar daal and the boiled scooped potato part and mix well. Add a pinch of salt, turmeric powder, cumin powder and mix well. Stuff scooped and cooked potato shells with this stuffing. Reserve the rest cholar daal for the gravy. - 7
Prepare the gravy-
Add 1 tbsp ghee in the same pan. Now light fry the stuffed aloo and take out and keep aside. In the same pan add 1 tbsp ghee more and add the garam masala whole spices. Temper and once the aroma releases, add 1 tsp ginger paste and 2 tsp water and saute. - 8
Now add 4 tbsp curd and keep stirring continuously. Add 2 tbsp tomato paste, salt, sugar and turmeric powder, Kashmiri red chilli powder. Pour 1 cup water and stir well. Add the remaining cholar daal stuffing. Add Everest Kitc

Serve as a side dish with khichuri.
