Take a pan and heat it over medium flame.Add ghee and once it melts, add cardamom, cloves, black peppercorns, cinnamon stick.Sauté for a minute. Then add the onions and a bit of salt. Sauté until the onions turn brown. Then add the ginger-garlic paste and sauté until the rawness is gone.Next, add the powdered spices such as turmeric powder, red chilli powder and coriander powder. Mix well. Then add the finely chopped tomatoes and mix well.Once the tomatoes start turning soft, lightly mash them.

Once the oil starts to separate, add some garam masala and yoghurt to the pan. Then add the mutton pieces and coat them with the gravy. Let the gravy cook for 5 minutes. Then add water, and salt as required. Cover with a lid and let it cook for 30 minutes until the mutton turns tender and juicy. Garnish with coriander leaves and serve.
