Ingredients

30 minutes
Serves 1 serving
  1. 2 1/2 ozmixed salad greens
  2. 8cherry tomatoes
  3. 1 ozred bell pepper rings
  4. 1 ozyellow bell pepper rings
  5. 2baby corn
  6. 1 1/3 tablespoonsextra virgin olive oil
  7. Italian Herb Lemon Chicken Tenders:
  8. 3chicken tenders
  9. Italian mixed herbs, to taste
  10. 1little lemon juice
  11. 1 pinchsea salt
  12. Japanese Simmered Pumpkin:
  13. 5 1/3 ozpumpkin chunks with skin
  14. 1 ozmirin
  15. 1/2 ozsoy sauce
  16. 2/3 cupwater (about 150 ml)
  17. 1/3 ozbrown sugar
  18. 1 pinchsalt

Steps

30 minutes
  1. 1

    Prepare all the necessary ingredients.

    Blanch the baby corn: Boil water in a pot, add the cleaned and cut baby corn, blanch until cooked, then soak in ice water and drain.

    Japanese Simmered Pumpkin: Place the pumpkin chunks with skin in a non-stick pan, add mirin, soy sauce, water, brown sugar, and salt in order, cook until the pumpkin is done, then turn off the heat and let it sit for 10 minutes.

    Italian Herb Lemon Chicken Tenders: Marinate the chicken tenders with lemon juice and sea salt for 5 minutes, then pan-fry them, sprinkle with Italian mixed herbs until the tenders are cooked, remove and let cool.

    Lay the mixed salad greens as a base, then add the bell pepper rings (wash with cold water and remove seeds before cutting on a clean cutting board), Japanese simmered pumpkin chunks, and Italian herb lemon chicken tenders. Finally, add the cherry tomatoes.

    Drizzle with extra virgin olive oil and toss before serving.
