Tuna and artichoke salad
A simple, light salad, full of flavour
Steps

Halve the artichokes and add to a large bowl. Roughly chop the tomatoes and combine

Peel, halve and slice the red onion. Add to a smaller bowl seasonal with salt and a pinch of sugar then drizzle over 1 tbsp of vinegar and scrunch together with your hands.

Allow to sit for 1-2 mins then add to the artichokes with any juices. Drain and fork through the tuna and add the drained tin of beans. Season, drizzle with olive oil a little more vinegar if you like and finish with the capers
