Apple Pancakes

The other day, when I was cooking ‘Ukrainian Inspired Cabbage Pancakes’ again, as I am loving them, I thought I could make sweet pancakes in the same way using Apple, then I tried. I used Granny Smith Apple. A lot of juice came out from it and made the batter very runny. I didn’t squeeze the grated Apple because I wanted to keep all the juice. I needed to add extra Flour to make the batter right texture. Now I can share the recipe with you. I added only 2 tablespoons Sugar, but the pancakes turned brown quite quickly. So, you need to cook them over low heat.

Ingredients

2 servings
  • 1Granny Smith Apple *OR Apple of your choice
  • 2 tablespoonsSultanas OR Raisins
  • Oil for cooking
  • Icing Sugar for dusting
  • Sour Cream to serve
  • Batter
  • 1Egg
  • 2 tablespoonsCaster Sugar
  • 1 pinchSalt
  • 2 tablespoonsSour Cream
  • Ground Cinnamon as required
  • Zest of 1/2 Lemon *finely grated
  • 6 tablespoonsSelf-Raising Flour *plus extra 1-2 tablespoons might be necessary

Steps

    In a mixing bowl, combine all the Batter ingredients.

  2. 2

    Peel Apple, coarsely grate it, add to the batter, and mix well. You might need to add extra 1-2 tablespoons Self-Raising Flour depending on the moisture of the Apple you use. (Today I added 8 tablespoons in total.) Add Sultanas (OR Raisins) and mix to combine.

    Heat a small amount of Oil in a frying pan, non-stick preferred, over LOW heat, form pancakes and cook for 3 minutes OR until nicely browned, then flip over and cook the other side for 2-3 minutes.

    Dust with Icing Sugar and enjoy with Sour Cream.
