Ingredients

  1. 4Carrots (Sliced OR Diced)
  2. 1 TeaspoonGinger (Finely Chopped)
  3. 1/2 TeaspoonGarlic (Finely Chopped)
  4. 1Small Potato (Sliced OR Cubed)
  5. 1White Onion (Thinly Sliced)
  6. Salt & Pepper To Taste
  7. 2 TablespoonsOlive Oil
  8. 2 CupsOf Vegetable Stock OR Water
  9. Few Curry Leaves OR Chopped Coriander/Cilantro Leaves To Garnish

Cooking Instructions

Approx 30 Mins

    Heat olive oil & fry the ginger & garlic for a few seconds. Than add the onions & fry till the onions are a bit soft.

    Add in the potato slices & mix well. Then add the carrots, stock or water, salt & pepper to taste.

    Cover & boil for around 10 to 15 minutes. Once the carrots are soft but not mushy, transfer everything to a blender & blend till smooth. Be careful, hold the blender jar with a kitchen towel as it will be hot so pulse it a few times before blending.

    Once done, transfer to a serving bowl or a soup dish, garnish with curry leaves or cilantro & pepper.

    Serve warm with croutons.
