These Banana Muffins are quick are easy & eggless muffin recipe made with whole wheat flour, ripe banana & sugar .Enjoy these eggless muffin with breakfast or as a midday snack.

In a mixing, jar takes 1 overripe banana & 2 tbsp of sugar and blend it into a smooth paste. Transfer it into a bowl, to it add 1/4 cup curd,1/4 cup oil, and 1/2 tsp vanilla essence and mix them all together..To the banana curd mixture, sieve & add 1cup of whole wheat flour, 1/2 tsp baking powder, 1/4 tsp baking soda & a pinch of cinnamon powder, and a generous amount of walnuts. Mix all the ingredients nicely.Preheat the oven to 180 degrees.

Pour the batter into the silicon moulds and top them with walnut kernels and tap them twice and bake them for around 25-30 minutes at 180 degrees. The baking temperature may vary as every oven has its own configuration. Once done keep them aside to cool & then demould.
