Kesar Rabdi Kheer is a delicious dessert from North India. A creamy rich kheer which is prepared on special occasions. Basically rabdi is a sweetened evaporated milk made by boiling milk on low heat for a long time. Then rice is added and cooked. Kesar rabdi kheer is a flavorful variation to regular kheer in which saffron gives it a golden yellow color and aroma to the kheer.

Kesar Rabdi Kheer is a delicious dessert from North India. A creamy rich kheer which is prepared on special occasions. Basically rabdi is a sweetened evaporated milk made by boiling milk on low heat for a long time. Then rice is added and cooked. Kesar rabdi kheer is a flavorful variation to regular kheer in which saffron gives it a golden yellow color and aroma to the kheer.

Boil milk in a heavy bottomed pan.

When milk starts to boil lower the flame and let it simmer on low. Stir it occasionally. When layer of the cream appears on the surface shift it towards the side of the pan. Cook till milk is reduced to 1/3 of quantity.

Add rice and cook till rice dissolves in milk. Then add sugar and let it dissolves. Now keep on stirring continuously.

Add chopped almonds, pistachio, saffron strands and cardamom powder. Mix well.

Scrape small cream chunks collected on the sides of pan into milk.

When cool, refrigerate it for 2 hours.

Then serve chilled garnished with chopped pistachio.
