Aviyal is healthy, delicious and popular curry recipe, prepared to celebrate Onam for ten days in Kerala. It's a traditional curry with mixed vegitables. This is also prepared in Tamilnadu and Karnataka. The recipe is made with available vegetables, coconut paste, curd and coconut oil.

Steps

Vegetables lik carrots,
Cauliflower, Beans, long beans, Tori, pumpkin, green papaya, Brinjal, potatoes, potal etc being used. Chop the veggies. - 2
Heat 2 cups of water in a pan. When started boiling, add the chopped vegetables. Add turmeric and salt. Mix well.

Make coconut paste with grated coconut, ginger, and green chili. Set aside

To the half-boiled vegetables add coconut paste, mix, cover, and cook.

When the curry is prepared and beaten curd, mix well.

Then pour coconut oil and curry leaves. Allow cooking for a minute. Serve with hot rice.
