Eggplant Gateau with Buffalo Mozzarella, Air Fryer Method

A delicious and very simple dish to make, cooked entirely in the air fryer. First, I softened the eggplant in the air fryer, then removed the skin and roughly mashed the flesh. Next, I added almost all the other ingredients, mixed everything together, and poured more than half of the mixture into a 7.5 x 7.5 inch (19x19 cm) square baking pan lined with parchment paper. I layered it with sliced buffalo mozzarella and covered it with the remaining mixture. Finally, I sprinkled breadcrumbs and grated Parmesan on top and cooked the gateau in the air fryer for 15 minutes. This is a fantastic main dish, great served hot or cold, and very versatile—you can even serve it as an appetizer by cutting the gateau into small squares.

Wash the eggplant, remove the stem, and cut it in half. Score the skin and flesh with a knife. Line the air fryer basket with parchment paper, place the two halves inside, and cook for 15–20 minutes at 400°F (200°C), turning them halfway through.

When done, place the eggplant on a plate and let it cool slightly. Remove the skin and roughly mash the flesh with a fork. Add salt, panca chili powder, finely crushed garlic, and parsley.

Add 2 tablespoons of breadcrumbs and 2 tablespoons of grated Parmesan, a generous drizzle of olive oil, and the egg. Mix until well combined.

Spread two-thirds of the mixture evenly over the bottom of the parchment-lined baking pan and sprinkle with 2 tablespoons of grated Parmesan.

Layer the sliced buffalo mozzarella on top and cover with the remaining mixture.

Sprinkle the rest of the breadcrumbs and grated Parmesan over the top. Remove the air fryer basket and place the pan inside. Close and set the air fryer to 355°F (180°C) for 15 minutes.

Five minutes before the end of cooking, increase the temperature to 375°F (190°C) and finish baking the gateau.

Using oven mitts, open the air fryer, take out the pan, and let it cool slightly before serving.
