Ukdiche Modak
Made these authentic ukdiche modak on the auspicious occasion of Ganesh Chaturthi this year. It was first attempt & it turned out so yummy though not that perfectly shaped Hopefully you all will appreciate the home chef in me !
Steps
- 1
In a heavy bottom pan add clarified butter. Now add grated coconut and cook about 2 minutes and jaggery and sugar.
- 2
Let it cook for few minutes and once jaggery completely melts add semolina, cardamom powder, salt and mix well. Cover with lid and keep it aside
- 3
In another pan add water, once it starts to boil add milk & clarified butter. Now add rice flour in batches and keep stirring, Turn off the flame and transfer it in bowl.
- 4
Now start kneading dough by applying oil on palms and smoothen the dough. Take palm size dough & flatten it with palm. Add in the prepared filling and close from corners to centre like a modak. You can apply water if modak tends to appear cracky or break. Now using a wet tooth pick form lines on modak.
- 5
Modaks are ready for steaming. I have used large bottom kadai and have placed banana leaf on steamer. Now place the modaks by applying Little oil on bottom and cover with lid and steam for about 12-15 minutes.
- 6
Now add in soaked saffron strands on top & pour melted clarified butter and enjoy.
