Sugar-Free Sweet Corn Tamales

I made my first sweet corn tamales for my #lotería line and they turned out delicious! At first, I didn’t know they were supposed to be sweet until I saw @Yorozura’s recipe. I chose it because it seemed so simple and uses ingredients you can find anywhere in the world. I also saw that some people fill them with fruit or jam, so I decided to add a little sugar-free strawberry jam and really liked it. In my case, I know I wasn’t very traditional, but since I couldn’t find corn husks, I used some aluminum foil and resealable bags instead, and they worked great. In fact, I think the ones in the bags turned out even better than the ones in foil. Oh, and I also replaced the sugar with monkfruit, so they’re sugar-free too!

Cooking Instructions

Blend the corn, monkfruit, cinnamon, butter, and jam (except the water) until the mixture is as smooth as possible.

Spoon the mixture onto corn husks, aluminum foil, or resealable bags. If you like, add a little sugar-free jam in the center and cover with more batter. Seal the packets well so the mixture, which is still a bit runny, doesn’t leak out.

Steam for 1 hour. Remove from the packets and serve with sour cream on top.
