Gozleme / Turkish stuffed flat bread

Gozleme is a type of Turkish flatbread which is a very famous and popular street food in Turkey. This bread can be prepared with or without yeast. It can be stuffed using nonveg or vegetarian filling. Spinach and feta cheese is a very popular vegetarian filling for this bread.
I have used spinach, ricotta, and mozzarella cheese to stuff this bread which has come out really delicious.

Gozleme is a type of Turkish flatbread which is a very famous and popular street food in Turkey. This bread can be prepared with or without yeast. It can be stuffed using nonveg or vegetarian filling. Spinach and feta cheese is a very popular vegetarian filling for this bread.
I have used spinach, ricotta, and mozzarella cheese to stuff this bread which has come out really delicious.

Add yeast to the warm water and leave it for 5 minutes.

Now add all-purpose flour, salt yogurt and two tablespoon of olive oil in a bowl and give it a good mix. Now add yeast water to it and make a soft dough. Add one tablespoon of olive oil to it and knead the dough until soft. Put the dough in a greased bowl. Cover and keep it for 1 hour.

To prepare the filling, heat oil in a pan and add finely chopped onion to it. Saute it until light pink in colour. Now add finely chopped spinach to it along with salt and pepper. Mix everything well and cook it until all the water is evaporated from the spinach.

Add ricotta cheese to it and turn off the heat. Let it cool down completely then add mozzarella cheese to it. Divide the filling into 6 equal portions.

Sprinkle some dry flour on the worktop and take out the dough on it. Divide it into 6 equal portions. Now take one portion and roll it into a very thin and big circle. You can use dry flour to roll it out.

Now fold the top and bottom sides to bring them to the middle of the circle. Put some filling on top and cover with the sides. Gently press the sides to seal it. Now take some dry flour and roll it gently to make it a little bigger.

Heat a pan at medium heat. Apply some olive oil on top of the bread and put the oil side down on the pan. Roast it on medium heat until golden brown in colour. Now put some more olive oil on top and flip it over. Roast it until golden brown from both sides.

Take it out on a wire rack when it is ready. Repeat for the remaining dough. Cut it into square or rectangular pieces.

Serve gozleme along with lemon wedges and yogurt dip.
