Ingredients: 4 chicken breast; 1-2 teaspoon kosher salt to taste; 1 teaspoon black pepper; 2 packs McCormick white chicken chili Seasoning mix; 1 (32 oz) box low sodium chicken broth; 2 cans rotel tomatoes and green chilies; 2 cans black beans rinsed and drained well; 2 cans cannellini beans rinsed and drained well; 1 bag frozen birds eye baby gold and white corn or the fire roasted corn; Juice from 1 to 2 limes; 1-2 tablespoons minced cilantro; Toppings 👇; Sour cream; Salsa; Shredded mexican cheese blend; Tri color tortilla (strips) or I like quest chips salsa verda or chill lime

I had to up the white Chicken chili recipe I had and I called this fiesta chicken chili. It's so darn delicious my taste buds were partying in my mouth. ❤️

Ingredients

4chicken breast
1-2 teaspoonkosher salt to taste
1 teaspoonblack pepper
2 packsMcCormick white chicken chili Seasoning mix
1 (32 oz)box low sodium chicken broth

Steps

Place the chicken in the crock pot and add the drianed and rinsed beans, Rotel, corn, chicken broth, salt, pepper, white chicken chili seasoning packs, and lime juice gently mix up and cook on high for 4 to 5 hours

Remove chicken and dice or Shred and place back in crock pot with cilantro mixing till combined and set on low till ready to serve.

Serve with a dollop of sour cream, salsa, shredded cheese and tortilla strips or quest chips

Tips

If you want you can dice up the raw chicken into bite size pieces first and then add to crock pot or you can dice up and cook the chicken in a pan first and then add everything to a large pot on the stove top and bring to a boil then reduce heat and simmer for about 20 minutes.
